Today I am attending a virtual spring dinner party with some of my favorite Canadian blogging friends.  We are sharing everything from party invites to beautiful spring party decor – just what you need to inspire you for the season!  All of the links are at the end of this post so don’t forget to check them out. 🙂

Of course you can’t have a party without food, so I am bringing along these Mexican roll-ups for a little party appetizer.  We are actually going to be heading down to  Puerto Vallarta  in less than a week {woohoo!!!} so I might as well start getting my Mexican on!

We LOVE Mexican food around here.  It is one of the few foods that the whole family enjoys and there are always lots of vegetarian options for Dave.   These Mexican roll-ups are one of the kids’ favorites {as long as I leave the red peppers out of theirs!}.  They are a quick and easy dinner option {inspired from this recipe} and work great for party food!  Ole!

Vegetarian Mexican Roll-ups

These quick and easy vegetarian Mexican roll ups can be done in about 30 minutes - perfect for a weeknight meal or party appetizer!
Ingredients
  • 1 can Pillsbury refrigerated pizza dough
  • 1¼ cups refried beans
  • 2 tbsp. taco seasoning
  • 1 cup corn
  • ½ red pepper, diced
  • 1¼ cups shredded Mexican cheese
  • toppings of your choice {sour cream, salsa, guacamole, chopped tomatoes, etc.}
Instructions
  1. Pre-heat the oven to 400 degrees. Lightly spray a cooking sheet with cooking spray.
  2. Unroll the pizza dough onto a cutting board or other flat surface and shape into a rectangle.
  3. Mix the refried beans and taco seasoning and spread evenly over pizza dough.
  4. Layer the corn and red papers over top and follow with cheese.
  5. Starting from the long side of the rectangle, tightly roll up the pizza dough.
  6. Using a serrated knife, slice the roll into approximately 1 inch sections. Gently separate the slices and place on baking sheet. If your slice has come unrolled at all, shape it back into position.
  7. Bake for approximately 14-15 minutes until the tops are golden brown.
  8. Garnish with toppings of your choice.

Perfect for a quick and easy dinner idea or party appetizer!  // cleanandscentsible.comI found mine worked best on one of the racks closer to the top of the oven to avoid burning on the bottom.  Just check the bottoms after about 12 minutes to make sure that they are still looking good!
