Mini Pecan Pumpkin Bundt Cake Recipe and Gift Idea

Hello, Susan from Love of Home here with you on this beautiful Friday! I love homemade gifts, and food is one of my favorite things to give. I have a sweet recipe to share with you today that is perfect for fall – Pecan Pumpkin Mini Bundt Cakes. I also created a chalkboard label printable just for you!

These are so cute for fall hostess gifts or Thanksgiving favors!I picked up a mini bundt pan at Michael’s in the baking aisle {using a 50% off coupon} along with some cute boxes & plaid papers. I like to have options when I’m wrapping so I bought both knowing that they will get used sooner or later!

This mini pecan pumpkin bundt cake makes the perfect fall dessert and is easy to whip up!

Pecan-Pumpkin Mini Bundt Cake Gifts

Serves: 12 mini cakes
 
These delicious mini pecan pumpkin bundt cakes make the perfect fall dessert!
Ingredients
Mini Cakes
  • Yellow cake mix
  • Small box vanilla instant pudding
  • 3 eggs
  • ½ cup oil
  • ½ cup water
  • ½ tsp vanilla extract
  • 1 can of pumpkin puree
  • ½ cup chopped pecans
Glaze
  • 1 tbsp milk
  • 1 cup confectioner sugar
  • Sprinkles if desired
Instructions
  1. Heat oven to 325.
  2. Put all ingredients in one bowl and mix for about three minutes on medium speed.
  3. Spray bundt pan generously with non-stick cooking spray, you can lightly flour as well. This will insure the cakes won't stick.
  4. Fill each about halfway.
  5. Bake for 18-20 minutes until toothpick comes out nearly clean.
  6. Let cool for 5 minutes before turning out onto a baking rack. Cool completely.
  7. Mix the milk ad confectioner sugar to make the glaze and drizzle over the mini cakes. Add sprinkles if desired.
  8. Makes 12 mini cakes.

I added one mini cake to each of the boxes and the rest to the cute plaid paper holders. The boxes got ribbon tied with the labels. The paper holder wrapped cakes went into food safe cello bags tied with ribbon and the tag.

 I loaded them into a pretty basket and the kids and I headed out to give them to our neighbors, friends and family. These would be darling favors for your Thanksgiving guests or make thoughtful hostess gifts for any fall get-together.

We often bake and deliver things for no special reason. I like the kids to see you don’t need a reason to be thoughtful or do something to brighten someone’s day. It’s become a tradition with our family and I hope they pass it along to theirs someday.

    These little bundt cakes look amazing and soubd delicious Susan. You know, Ausies use pumpkin as a vegetable, so I’m fairly new to using it in my baking, but this definitely looks like an easy recipe the whole family will enjoy.

    What size bundt pan did you use? I have Wilton with 12 cavities but they look a lot smaller than what these are.

    Hi there. I was wondering if I could use a normal bundt cake pan for this recipe? I’ve been requested to bake it but for a whole affair (not individuals cakes). Would this recipe work for a normal bundt pan?

      Yes it would work, but the baking time would likely be more. You’d just have to check frequently towards the end to see when it’s done.
