Pecan-Pumpkin Mini Bundt Cake Gifts

Serves: 12 mini cakes
- Yellow cake mix
- Small box vanilla instant pudding
- 3 eggs
- ½ cup oil
- ½ cup water
- ½ tsp vanilla extract
- 1 can of pumpkin puree
- ½ cup chopped pecans
- 1 tbsp milk
- 1 cup confectioner sugar
- Sprinkles if desired
- Heat oven to 325.
- Put all ingredients in one bowl and mix for about three minutes on medium speed.
- Spray bundt pan generously with non-stick cooking spray, you can lightly flour as well. This will insure the cakes won't stick.
- Fill each about halfway.
- Bake for 18-20 minutes until toothpick comes out nearly clean.
- Let cool for 5 minutes before turning out onto a baking rack. Cool completely.
- Mix the milk ad confectioner sugar to make the glaze and drizzle over the mini cakes. Add sprinkles if desired.
- Makes 12 mini cakes.
