Jello Watermelon

Yikes! It has been awhile since I have posted. I always feel like I am scrambling at this time of year getting organized for back to school and still trying to cram in all of the summer activities that we didn’t get around to!

The boys and I finally made our jello watermelon that we had been talking about for the last month. (Well, actually this was our second attempt as our first batch ended up as a big jello blob.)

Here is our watermelon:

It is a really quick and easy treat that the kids loved! Here’s all you need to do:

1. Cut your watermelon in half and scoop out the watermelon. A smaller watermelon definitely works best. If it has a little bit of a flat base so it will stand up straight even better!
2. Make your jello. I used 4 packages of the large jello packages (8 serving size) and 7 cups of boiling water. Make sure you don’t follow the water instructions on the package or the jello won’t be firm enough.
3. Pour the jello into the watermelon shell and put it in the fridge to set.
4. When the jello is partially set, poke chocolate chips in for the watermelon seeds.
5. Let the jello set until VERY firm. I ended up leaving it for about 8 hours. We were a little too ambitious on our first attempt and after 5 hours the jello wasn’t quite ready (i.e. big jello blob).

Here are the kiddies enjoying their treat:

Do you like Matthew’s blue and red hair? Yes, it was back to school hair cuts today. Matthew LOVES getting his hair done and lives for the coloured gel. He was quite funny trying to arrange his pillow tonight so he wouldn’t ruin his hair! Connor, on the other hand, totally HATES getting his hair cut and it is quite the embarrassing experience for me. I basically have to drag him to the chair kicking and screaming. Then I get to sit with him in a straight jacket hold while he yells “LET ME GO!!”. The hairdresser is saying how cute and sweet he is (yeah right! I know she couldn’t wait to get rid of us) and how this “always happens” (um, I have never seen it before). In the end, we have a half decent hair cut and I am totally covered in hair. Oh, and I get to do it all again in another 6 weeks. Yippee!

I guess I will have to go eat more jello!
