Cookies ‘n Cream Mud Pie

During the summertime, we tend to go through a lot of ice cream around here.  It’s always fun coming up with new ways of eating it and these little cookies ‘n cream mud pies were easy for the boys to make with me.  Not to mention that they tasted pretty yummy too…

These cookies and cream mud pies are SO good !  Such a fun summer treat!
You definitely need to give these a try – one of my favorite summer treats!

Cookies 'n Cream Mud Pies

Total time:  3 hours 10 mins
Serves: 8
 
These tasty frozen treats are easy to whip up and perfect for a summer day!
Ingredients
  • 1½ cups crushed chocolate wafers
  • ⅓ cup melted butter
  • cookies 'n cream ice cream
  • Cool Whip
  • strawberries
Instructions
  1. Place the cookie wafers in a Zip Lock bag. Mix the crumbs and the melted butter.
  2. Lightly spray a muffin tin with non-stick cooking spray. Press crumbs into the bottom and sides of the tin {I made 8 pies with a little left over that we ended up sprinkling on top}. Freeze for 1 hour.
  3. Let your ice cream soften slightly and spoon into the shells, smoothing the surface.
  4. Cover with plastic wrap and freeze for at least 2-3 hours.
  5. Just before serving, add some Cool Whip and top with a strawberry.

Then just sit back and enjoy!

Our family is heading over to Thetis Island for a wedding and Matthew is pretty excited that he gets to be the Ring Bearer. I will see you on Sunday for some party highlights and might just have a picture or two of my handsome little dude to share!
