Blackberry Cheesecake Pots

Hello! I thought I would give you a mid week boost with a delicious treat for you – Blackberry Cheesecake Pots. Seriously, these things are SO good and super easy to make.

A couple of weeks ago, I went blackberry picking and loaded up a couple of pails.  Oh how I love blackberry season.  These guys were so plump and juicy – I am sure I ended up eating more than I brought home.

After eating a lot and freezing the rest, my plan was to have a nice stock in the freezer for fruit smoothies throughout the winter.  Unfortunately, my stock is depleting at a much faster rate since I discovered this Blackberry Cheesecake Pot recipe from Chez Us.  I changed it around a bit but my, oh my, is it good {and super easy!}  This can always be made using other berries as well but, I must admit that blackberries are my favorite. 🙂

Blackberry Cheesecake Pots

These no bake blackberry cheesecake pots are so creamy and can be whipped up in only a few minutes!
Ingredients
  • 250g light cream cheese
  • ¼ cup extra fine sugar
  • ¼ cup whipping cream
  • 1 tsp vanilla extract
  • 1½ cup blackberries {divided} You can use other berries as well.
  • light Cool Whip
Instructions
  1. Using a food processor, mix together cream cheese, sugar, whipping cream, and vanilla until smooth.
  2. Add ¾ cup blackberries and process until just crushed {if you like your berries a little less processed, freeze them for 30 minutes beforehand}.
  3. In each mason jar, I layer ¼ of the mixture on the bottom of the jar, add a layer of Cool Whip, a thin layer of fresh berries, and then top with another ¼ of the mixture.
  4. Chill until ready to eat. Top with more fresh berries prior to serving.
  5. This recipe makes about 2 mason jars {2 servings each} or 4 parfait dishes.

    Look fantastic! Do you think it would work with other fruit (strawberries or raspberries, maybe)? I’m not a HUGE blackberry fan, but it just looks to good not to try!

    Caroline, Cool whip is basically whipped cream. This looks delicious!! I like the idea of keeping it vanilla and adding in crushed graham crackers.
