These no bake blackberry cheesecake pots are so creamy and can be whipped up in only a few minutes!
Ingredients
250g light cream cheese
¼ cup extra fine sugar
¼ cup whipping cream
1 tsp vanilla extract
1½ cup blackberries {divided} You can use other berries as well.
light Cool Whip
Instructions
Using a food processor, mix together cream cheese, sugar, whipping cream, and vanilla until smooth.
Add ¾ cup blackberries and process until just crushed {if you like your berries a little less processed, freeze them for 30 minutes beforehand}.
In each mason jar, I layer ¼ of the mixture on the bottom of the jar, add a layer of Cool Whip, a thin layer of fresh berries, and then top with another ¼ of the mixture.
Chill until ready to eat. Top with more fresh berries prior to serving.
This recipe makes about 2 mason jars {2 servings each} or 4 parfait dishes.
