Cream Cheese and Apple Stuffed French Toast

Well, we are now into our last official week of summer vacation and I am definitely not ready to see these summer days come to an end.  I know that there are still a few weeks left before the start of fall, but once school goes back, I really feel like summer has ended.   So with back to school looming, I decided to have an impromptu family brunch out on our patio this weekend and made up some of this yummy stuffed french toast…
Cream Cheese Stuffed Apple French Toast - like apple pie for breakfast!  This is SO good!
With the apple topping it is almost like having apple pie for breakfast! 🙂
Ingredients
 Topping
  • 1 tablespoon butter
  • 2 Granny Smith apples peeled, cored, and sliced into thin strips
  • 1/4 cup brown sugar
  • 1/4 cup apple juice
  • 1/4 cup chopped walnuts
  • 1/2 tsp cinnamon

Filling

  • 1/2 cup cream cheese
  • 2 tablespoons maple syrup

French Toast

  • 8 slices of bread
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • butter
Cream cheese stuffed apple french toast - it's like having apple pie for breakfast!  This is SO good!

To Make
Topping
Melt the butter in a large nonstick pan on medium heat.  Add the apples and cook for 2-3 minutes.  Add the remaining topping ingredients and cook for an additional 5 minutes stirring occasionally.  Set aside.

Filling
Mix together the cream cheese and syrup and spread over 4 slices of bread.  Top with the remaining 4 slices to make a sandwich.

French Toast
Whisk together eggs, milk, vanilla and cinnamon in a shallow pan. Dip each sandwich in the egg mixture making sure to coat both sides.  Melt approximately 1 tbsp of butter in a large, nonstick pan on medium heat.  Add the sandwiches cooking for 3-4 minutes on each side until golden brown.  Top each sandwich with the apple mixture and serve.

This cream cheese stuffed french toast is SO good!
It’s fun having a little bit of a fancier breakfast every now and then.  And a nice way to spend one of our last weekends of summer vacation!  I hope you all had a wonderful weekend as well and enjoy the week ahead!
