Chocolate Rice Krispie Gingerbread Men Pops

I think gingerbread men are just the cutest, but my kids aren’t a big fan of the taste.  So… I decided to combine my love of gingerbread men with their love of Rice Krispie squares and came up with these adorable chocolate Rice Krispie gingerbread men pops.

Chocolate Rice Krispie Gingerbread Pops. These are SO cute and super easy to make. Such a fun Christmas treat perfect for parties or class treats.

These little guys taste delicious and are soft and gooey – just the way I like them!  They’re a fun project to do with the kids and would be perfect for class treats or a kids’ Christmas party.

Chocolate Rice Krispie Gingerbread Men Pops

These chocolate Rice Krispie Gingerbread Men are so cute and will be the hit of any kids' party or holiday gathering.
Ingredients
  • ¼ cup butter + more for greasing
  • 6 cups marshmallows
  • 1 tbsp. cocoa powder
  • 5½ cups chocolate Rice Krispies
  • white cookie icing
  • M&Ms or other candy for buttons
  • paper straw {if desired} or popsicle sticks
Instructions
  1. Over low heat melt the butter. Add in the marshmallows and stir to melt. Combine with cocoa powder and remove from heat.
  2. Stir in the Rice Krispies until combined.
  3. Grease the inside of a gingerbread man cookie cutter {as well as your hands!} and place on waxed paper or parchment paper. Press the Rice Krispie mixture firmly into the mold. If you are making pops, you will need to make the gingerbread men a little thicker {about 1 inch} to hold the stick in place. If you are just making the gingerbread men with no stick, they do not need to be as thick.
  4. Remove the Rice Krispie treat from the cookie cutter and place on waxed paper or parchment paper. Twist the stick in at the bottom. Keep firm pressure on the gingerbread man so he stays together. You may need to just re-form the shape a bit once the stick has been inserted. Press firmly together.
  5. Decorate with cookie icing and candy as desired.

If you’re going to be making your chocolate Rice Krispie gingerbread men into pops, be sure to make them fairly thick {about an inch} so they can support the stick.  If you’re just making the gingerbread men themselves, you can make them about half as thick and double your little gingerbread army. 🙂

To make the decorating easier, I buy the pre-made cookie icing as it’s a little thicker and dries nicely.  You can always make your own if you prefer.  If you have multiple decorators, place some icing in condiment bottles from the dollar store.  You can go as crazy or as simple as you would like with the decorating.

    Have you tried making sheets of rice krispies and cutting them with the cookie cutter? I have to make a bunch and I’m afraid it will harden before I can mold them all.
