Broccoli Cheese Soup

I’ve been on a little bit of a soup kick lately and seem to be eating it at least a couple of times per week. It’s an easy meal to prepare during our busy weeknights and goes great with some grilled cheese sandwiches or a nice, fresh bagette.

Creamy broccoli cheese soup.  Easy to prepare for lunch or dinner.This soup was a hit for the whole family and can be prepared in about 30 minutes.  It’s great paired with some grilled cheese sandwiches too!

Easy to prepare for lunch or dinner.My favorite little “secret ingredient” for this soup, is my Cheese, Chives, and Bacon seasoning from Epicure.  It’s so good guys!  It’s actually made from soy bacon, so I can still get that bacon flavor even though my husband is a vegetarian!  If you don’t have the seasoning {or just prefer real bacon},you can always crumble a few slices of bacon in the soup too.

Broccoli Cheese Soup

This broccoli cheese soup always hits the spot and goes well with a grilled cheese sandwich for a quick and easy dinner.
Ingredients
  • 1 head of broccoli, finely chopped
  • 1 small onion, finely chopped
  • 1 tbsp. butter
  • 1 tsp. salt
  • 1 tspt pepper
  • water, to cover
  • 1 - 13.5oz. can of evaporated milk
  • 250 g Velveeta cheese
  • 1 tsp. parsley flakes
  • OPTIONAL: 1-2 tbsp. Epicure Cheese, Chives, and Bacon seasoning or 3-4 strips of cooked, crumbled bacon
Instructions
  1. Put broccoli, onion, butter, salt, and pepper in a saucepan. Add water to cover. Bring to a boil and continue boiling until vegetables are tender.
  2. OPTIONAL: If you want a smooth soup, run the vegetable, mixture through the blender. I prefer mine a little chunkier, so I did not do this with mine.
  3. Add milk, cheese, and parsley. Add Epicure seasoning or bacon strips if desired. Boil slowly for 15 minutes. Add seasoning, salt, and pepper to taste.
