Hey guys! This blueberry quinoa salad makes the perfect light summertime meal.  It is packed with nutrients and tastes delicious!

Blueberry Quinoa Salad

This blueberry quinoa salad makes the perfect light summer meal. It is packed with nutrients, simple to prepare, and tastes delicious!
Ingredients
  • ¼ cup Quinoa
  • ½ cup sliced almonds
  • 4 cups baby spinach leaves
  • ¾ cup crumbled light feta
  • ¼ cup sliced red onion
  • 1 cup blueberries
  • 3 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 4 tsp honey
  • 1 tsp Dijon mustard
  • pepper to taste
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare the quinoa as per package directions.
  3. Spread the almonds on a baking sheet and toast in the oven until they are lightly browned {approximately 5-6 minutes}
  4. Divide the spinach into 4 large or 6 small servings. Sprinkle the feta, quinoa, onion, and blueberries evenly.
  5. Whisk the remaining ingredients in a small bowl and season with pepper. Just before serving, drizzle the dressing over the salads.

I absolutely love this salad and it tastes great with strawberries or pomegranate seeds as well.  It is filling enough for a light meal or serve as a healthy starter salad.
