Mickey Waffles

This delicious waffle recipe makes the perfect light and fluffy Mickey waffles. Works for any waffle maker!

Ingredients

  • 2 large eggs, separated
  • 1/2 cup vegetable oil
  • 2 cups whole milk We often use 2% and it works fine too.
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • salted butter, melted (for coating waffle maker) NOTE: Using cooking spray on your waffle iron can ruin so the non-stick coating, so stick with butter!

Instructions

  1. Preheat your waffle iron.

  2. Add egg whites to a mixing bowl. Using the whisk attachment on a mixer, whip on high for about 5 minutes until stiff peaks form.

  3. In another bowl, hand whisk together egg yolks, oil, milk, and vanilla. Add flour, baking powder, salt, and sugar and mix until combined. Fold in the egg whites using a spatula.

  4. Using a brush, lightly coat the waffle maker with the melted butter. Fill with batter depending on the size of your waffle maker. Cook according to your waffle maker instructions.

  5. Repeat with remaining batter.

Recipe Notes

If you're serving all of the waffles together and need to keep them warm, preheat the oven to the lowest temperature. Place any finished waffles on a cooling rack on a baking sheet and keep in oven until all of the waffles are done.
