Ingredients

Purple Layer

  • 1 1/4 cup mixed frozen berries {I used a pre-packaged mix of blackberries raspberries, and blueberries}
  • 1/2 cup vanilla Icelandic {Skyr} yogurt or Greek yogurt
  • 1/2 cup - 1 cup baby spinach
  • 1/3 ripe avocado
  • 1 tbsp. chia seeds
  • 1 cup coconut water
  • 2-4 ice cubes

Orange Layer

  • 1 1/4 cup frozen peaches
  • 1/2 cup frozen cauliflower
  • 1 cup orange juice
  • 1/4 cup coconut water if needed

Instructions

  1. Combine all of the ingredients from the purple layer in a blender and blend until smooth.  You want a nice thick consistency that you would eat with a spoon, but not so thick that you can't blend it smooth. If it's too thick, add a little more coconut water.  If it's too thin, pop in a little more frozen fruit or ice cubes.  Transfer the mixture to a large glass or other container and place in the fridge or freezer while blending the second layer.
  2. Combine all of the ingredients from the orange layer and blend until smooth.  If needed, add a little extra liquid {if too thick} or a little more frozen fruit {if too thin} until you achieve roughly the same consistency as the purple layer.
  3. Using a clear glass cup or parfait dish, spoon in some of the purple smoothie.  Add a layer of the orange smoothie on top and continue alternating layers until you've reached the top of the glass.  Give it a little swirl at the top with a knife, and it's ready to serve.  Eat with a spoon or let it slightly melt to drink with a straw.
