Ingredients

Banana Bread

  • 1 1/2 cups mashed bananas 3 tbsp crushed peanuts {optional} {approximately 4 bananas}
  • 1/3 cup plain fat-free yogurt
  • 1/3 cup creamy peanut butter
  • 3 tbsp melted butter
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 cups all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp all spice
  • 1 1/4 cup chocolate chips {You can use a little less but I like mine chocolatey!}

Glaze

  • 2 1/2 tbsp half and half
  • 3 oz chocolate
  • 3 tbsp crushed peanuts or other nuts

Instructions

Banana Bread

Preheat the oven to 350F.

  1. Combine the mashed bananas, yogurt, peanut butter, butter, and eggs in a large bowl. Beat with a mixer at medium speed.

  2. In a separate bowl combine the flour, baking soda, salt, cinnamon and all spice. Add the sugars and beat until combined and fairly smooth. Add to the banana mixture and beat until just blended. Stir in the chocolate chips.

  3. Grease a 9x5 inch loaf pan and pour mixture into the pan. Bake at 350F for 65-70 minutes or until a wooden pick inserted in the center comes out clean. Allow to cool in the pan for at least 10 minutes and then remove for remainder of cooling.

Glaze

  1. Place the half and half in a microwave safe bowl and add chocolate chips. Heat on medium stirring every 20-30 seconds until melted. DO NOT OVERHEAT. Drizzle over the bread and top with crushed peanuts if desired.
