These melt-in-your-mouth pecan snowball cookies are quick and easy to make and are always a hit for Christmas cookie exchanges. Definitely a Christmas favorite!
Preheat the oven to 350F. In a large bowl beat the butter on medium speed for 30 seconds. Add the sugar, brown sugar, and salt and beat until combined. Beat in the vanilla and then the flour. Stir in the nuts.
Shape the dough into 1-inch balls (1 tbsp.) and place on an ungreased cookie sheet. Bake for 12 minutes or just until the bottoms begin to brown. Remove and cool on a wire rack.
Put some powdered sugar in a ziploc bag. Place a few cookies in the bag at at a time and gently shake to coat.
