Ingredients

Muffins

  • 1 box of spice cake mix
  • 15 oz. can of pumpkin puree
  • 2 teaspoons pumpkin spice
  • brown sugar optional

Filling

  • 6 oz. cream cheese softened
  • 2 tbsp. granulated sugar
  • 2 tbsp. milk
  • 2 tsp. vanilla extract

Instructions

  1. Muffins

In a large bowl, blend together the cake mix, pumpkin puree, and pumpkin spice.

  1. Spoon the batter into a muffin tin that has been prepared with muffin liners or misted with cooking spray. You should have enough batter for 12 large muffins.
  2. If desired, add a sprinkling of brown sugar to the top of the muffin batter. It will bake into a sugary crumble.
  3. Bake the muffins at 350 degrees for 20-25 minutes.

Cream Cheese Filling

  1. While the muffins are cooling, mix up a batch of cream cheese filling. To prepare the filling, combine cream cheese, sugar, milk, and vanilla into a bowl and mix until it goes from being watery to smooth and creamy.

  2. Use a cake decorating tip (Wilton #230 works great!) and icing bags to fill each muffin with a generous amount of cream cheese filling. Simply insert the decorating tip down into the center of the muffin and squeeze some of the cream cheese inside.
