This cranberry baked brie is simple to make and full of flavour. It's perfect for any holiday parties or just as a tasty holiday treat! You might want to make extra cranberry sauce for leftovers!
Ingredients
CRANBERRY SAUCE
  • 12 oz. cranberries, washed and dried
  • ¾ cup sugar {I like using ¼ cup brown sugar and ½ cup white sugar}
  • ⅓ cup water
  • ¼ tsp. all spice
  • ¼ tsp. nutmeg
  • 1 cinnamon stick
  • ½ an orange, juiced and zested
BAKED BRIE
  • 8-ounce round brie cheese, room temperature
  • 2-3 tbsp. walnuts, finely chopped {optional}
  • Fresh rosemary to garnish
Instructions
CRANBERRY SAUCE
  1. Pre-heat the oven to 350 F.
  2. In a medium sauce pan, combine the cranberries, sugar and water. Stir to combine and bring to a boil over medium heat.
  3. Reduce to a simmer and add the cinnamon stick, allspice and nutmeg. Stir to and simmer for an 7-9 minutes. Some of the cranberries will burst and some will remain whole.
  4. Add the orange juice and zest, reserving a small amount of the zest for garnish if desired.
BAKED BRIE
  1. Starting with chilled brie, score or remove the rind using a serrated knife. Be sure to remove as little of the soft cheese as possible. This allows the cheese to get better exposure to the heat and will let air escape in a controlled manner.
  2. Place the brie cut side up in a brie baking dish or on a pie plate lined with parchment paper. Bake for 10-15 minutes or until the cheese is bubbly.
  3. Top with ½ - ¾ cup of the cranberry sauce and walnuts if desired. Garnish with extra orange rind or rosemary. Serve warm with crackers or crostinis.
