Creamy Cauliflower Gratin

This creamy cauliflower gratin is an easy side dish that is perfect for family dinners or holiday sides!
Ingredients
  • 1 large cauliflower, chopped
  • 2 tbsp olive oil
  • 1 large garlic clove, minced
  • 2 tbsp flour
  • 1 tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup plain Balkan style yogurt
  • 1 cup grated aged white Cheddar cheese
  • 1 egg yolk
  • ½ cup bread crumbs
  • ¼ cup chopped fresh parsley
  • ¼ cup grated white Cheddar cheese
  • 2 tsp olive oil
  • 1 tsp lemon juice
Instructions
  1. Preheat the oven to 425F.
  2. Steam the cauliflower until it is tender when pierced.
  3. Heat oil and garlic in a skillet over medium-low heat until fragrant. Add flour, mustard, salt and pepper. Cook, stirring for 2 minutes.
  4. Add yogurt and cook for an additional 5 to 7 minutes until mixture thickens. Remove from heat, stir in cheese until melted. Whisk in egg yolk. Pour over cauliflower and stir until mixed.
  5. Lightly coat a shallow casserole dish with non-stick cooking spray. Add cauliflower mixture.
  6. Toss breadcrumbs with parsley, cheese, oil, and lemon juice until combined. Sprinkle on top of cauliflower and bake for 10 minutes or until topping is browned.
