Baked Tortellini with Pumpkin Sauce

This baked tortellini with pumpkin sauce is quick and easy to do and makes for the perfect fall dinner!
Ingredients
  • 1 package refrigerated tortellini {or any other pasta you would prefer}
  • 1 tbsp butter
  • 1 green onion, finely chopped
  • 1 cup whipping cream
  • 1 cup canned pumpkin
  • ⅓ cup + ¼ cup grated Asiago cheese
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ¼ tsp pepper
  • ½ cup dry bread crumbs
Instructions
  1. Preheat oven to 350 F. Spray a 2 quart baking dish with nonstick cooking spray.
  2. Cook pasta according to package directions and drain.
  3. Over medium heat, melt the butter in a saucepan. Add the green onion. Cook and stir for 2-3 minutes.
  4. Add the cream, pumpkin, ⅓ cup Asiago cheese, salt, pepper, and nutmeg. Cook and stir over low heat for approximately 2 minutes.
  5. Place the pasta in the baking dish and and combine well with sauce.
  6. Combine remaining cheese and bread crumbs together and sprinkle over the pasta.
  7. Bake for 15 minutes until heated through and the topping is gently browned.
