Baked Tortellini with Pumpkin Sauce

- 1 package refrigerated tortellini {or any other pasta you would prefer}
- 1 tbsp butter
- 1 green onion, finely chopped
- 1 cup whipping cream
- 1 cup canned pumpkin
- ⅓ cup + ¼ cup grated Asiago cheese
- ½ tsp salt
- ¼ tsp nutmeg
- ¼ tsp pepper
- ½ cup dry bread crumbs
- Preheat oven to 350 F. Spray a 2 quart baking dish with nonstick cooking spray.
- Cook pasta according to package directions and drain.
- Over medium heat, melt the butter in a saucepan. Add the green onion. Cook and stir for 2-3 minutes.
- Add the cream, pumpkin, ⅓ cup Asiago cheese, salt, pepper, and nutmeg. Cook and stir over low heat for approximately 2 minutes.
- Place the pasta in the baking dish and and combine well with sauce.
- Combine remaining cheese and bread crumbs together and sprinkle over the pasta.
- Bake for 15 minutes until heated through and the topping is gently browned.
