Apple Pie Pancakes

Ingredients
Pancakes
  • 1 ½ cups pancake mix
  • Non-stick cooking spray
  • Syrup and/or whipping cream (optional)
Apples
  • 3 apples, cored and cut into ¼ inch slices
  • 1 cup cold water
  • ¼ cup lemon juice
  • 2 cinnamon sticks (optional)
  • 1-2 tbsp butter
  • 1 tbsp brown sugar
  • ½ tsp cinnamon
Instructions
  1. Preheat the griddle insert to medium heat (approximately 300-350F). You can test to see if the griddle is hot enough by placing a few drops of water over it – the water should “dance” and sizzle if it is the correct temperature.
  2. Cut apples into ¼ inch slices. Combine the water and lemon juice in a mixing bowl and add the apples. Add additional water if needed to cover the apples. For additional cinnamon flavor, add 2 cinnamon sticks to the water.
  3. Prepare the pancake batter as per the instructions on the box (or use your own recipe). Be careful not to overmix.
  4. Spray the griddle with non-stick cooking spray and pour batter (approximately ¼ cup). Cook for 3-4 minutes until the underside is golden brown. Flip and cook for an additional 1-2 minutes. Make 8 pancakes.
  5. Preheat the wok insert to medium heat (approximately 300-350F). Melt butter in wok. Remove the apples from the water mixture and add to the wok. Cook for approximately 8 minutes, turning once. Remove from heat.
  6. Combine the brown sugar and cinnamon and sprinkle over apples. Top pancakes with apples. Add syrup and/or whipping cream if desired.
