Frozen Parfaits (Vegan, Dairy-Free, and Gluten-Free)

These creamy frozen parfaits are so rich and decadent you would never guess that they're vegan and dairy free! The perfect summertime dessert!
Ingredients
  • 1 500 mL container So Delicious salted caramel cluster cashewmilk frozen dessert, softened
  • 1 500 mL container So Delicious dark chocolate truffle cashewmilk frozen dessert, softened
  • ¾ cup crushed cashews
  • ¾ cup chocolate chips {I used Enjoy Life brand for a dairy-free option}
  • chocolate coconut milk whipped cream
Whipped Cream
  • 1 14 oz. can chilled, full fat coconut milk {preferably without guar gum} or coconut cream {which is sweeter}. Chill for at least 4 hours before mixing or preferably overnight.
  • ¼ - ½ cup organic powdered sugar depending on sweetness preferred
  • 2 tbsp. cocoa powder or cacao
Instructions
Whipped Cream
  1. Chill the coconut milk or cream overnight. Chill a metal mixing bowl and beaters for 15 minutes in the freezer prior to mixing.
  2. Remove the lid from the coconut milk without tipping and shaking the can. Scoop out the top thickened cream and leave the liquid behind {you can always save this to add to rice or smoothies}. NOTE: If your coconut milk is still liquid, it likely has guar gum or another emulsifier that prevents it from solidifying. See discussion in blog post.
  3. Add the coconut milk to the mixing bowl along with the powdered sugar and cocoa powder. Beat for approximately 2 minutes until smooth and fluffy.
Parfaits
  1. Add a layer of the softened So Delicious frozen dessert to the bottom of your jar and sprinkle with crushed cashews. {NOTE: If you're in a hurry and don't have time to wait for the dessert to soften, you can place it in the microwave for 10-20 seconds}.
  2. Add a layer of the coconut whipped cream.
  3. Add a layer of your second flavor of the So Delicious and sprinkle with the mini chocolate chips.
  4. Add a layer of the whipped cream.
  5. Add a final layer of the So Delicious and freeze for at least 1 hour. {NOTE: If you still have whipped cream left, it can be kept covered in the fridge for up to 2-3 days. Add to the top of your parfaits when served or use as a topping for fresh fruit or other desserts}.
  6. Remove the parfaits from the freezer and allow to soften for a few minutes before serving. Top with remaining chocolate chips and crushed cashews and/or remaining whipped cream.
  7. Makes 6-8 parfaits depending on your jar or parfait dish size.
