Blueberry Quinoa Salad

Serves: 4-6
- ¼ cup Quinoa
- ½ cup sliced almonds
- 4 cups baby spinach leaves
- ¾ cup crumbled light feta
- ¼ cup sliced red onion
- 1 cup blueberries
- 3 tbsp red wine vinegar
- 3 tbsp olive oil
- 4 tsp honey
- 1 tsp Dijon mustard
- pepper to taste
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare the quinoa as per package directions.
- Spread the almonds on a baking sheet and toast in the oven until they are lightly browned {approximately 5-6 minutes}
- Divide the spinach into 4 large or 6 small servings. Sprinkle the feta, quinoa, onion, and blueberries evenly.
- Whisk the remaining ingredients in a small bowl and season with pepper. Just before serving, drizzle the dressing over the salads.
