Mini Baked Alaskas {for Valentine's Day}


Hey guys! I have an easy little Valentine's Day treat to share with you today....


If you have been around here for a while, you know that I am not much of a baker {or cook!} but these guys were really fun and easy to make!

INGREDIENTS
  • 6 cupcakes {I am sure there is no surprise that I used a box mix!}
  • strawberry ice cream {or other favorite flavor}
  • 3 egg whites
  • 3/4 cup fine sugar
TO DO

  • Carefully slice off the top of the cupcakes and scoop out the inside.  I kept the cupcake liners on just to give the cupcake a little extra support - just don't forget to remove them later!
  • Spoon in ice cream and replace the top.  Freeze until firm {or ready to serve}.

  • Using an electric beater, whisk together the egg whites until soft peaks start to form.  Gradually add in the sugar and continue to whisk until it is thick and shiny.
  • Carefully remove the cupcake liners and spoon egg white mixture over the cupcakes until completely covered.
  • Place on a baking sheet and broil for approximately 1 minute or until the topping is golden brown.
  • Serve immediately.
